I have to say this is one heck of a read for those who want to go way beyond, pun intended, simple carbs.

Last, and certainly not least, I have two new recipes for my big meal folks and hopefully some more to come in the next few days. The beauty of these recipes is that you can easily make them higher calorie if need. Just a lil bit of everything as need to move up the calories. Gram it up!

Chicken and Sausage Bean Soup

Ingredients:

• Unbleached All Purpose Flour – 16 grams
• Walnut Oil – 14 grams
• Chopped Onion – 160 grams
• Chopped Red/Green Peppers – 175 grams
• Minced Garlic – 5 grams
• Chopped Celery – 150 grams
• ½ tsp Basil
• ½ tsp Thyme
• ¼ tsp Ground Red Pepper
• Chopped Tomato – 400 grams
• Chick Peas – 300 grams
• Turkey Sausage cut into 1-inch pieces – 112 grams (I used Jenni O)
• Lean Chicken – 14 ounces
• Fat Free Low Sodium Chicken Broth – 14 ½ ounces
• Salt and Pepper to taste

Directions:

• Combine flour and oil in a Dutch oven; saute over medium-high heat 3 minutes.

• Add onion and next 6 ingredients (onion through red pepper); cook 3 minutes or until tender, stirring frequently.

• Stir in chicken, sausage, tomatoes, and peas, and broth; cook 6 minutes or until thoroughly heated.

Stats for total meal:

Calories: 1311.92
Protein: 137.84 grams
Fat: 32.9 grams
Carbs: 127.48 grams
Fiber: 25.66 grams


Baked Broccoli and Cheese Beef Quesadillias

Ingredients:

•    Low Carb Tortillas – 4 or 156 grams (I used the Multi Grain Low in Carbs Tumaro’s Goumet Tortillas)
Here are the stats of the tortillas so you can find something similar if needed:
Stats: 39 g   Calories: 100  Fat: 2.5g  Protein: 7g  Carbs: 13g   Fiber: 8g
•    4% Lean Ground Beef – 16 Ounces
•    Broccoli – 300 grams
•    Onion – 200 grams
•    2% Mexican Cheese Blend – 50 grams
•    2 tsp Ground Cumin Powder
•    1 tsp Light Salt
•    ½ tsp Black Pepper
•    1 pinch of Ground Turmeric

Directions:

•    Pre-heat oven to 375 degrees
•    Steam the Broccoli and Blanch the Onions (cook them in water)
•    Once the veggies are done cook the meat make sure it is broken up into bite size or smaller pieces.
•    Chop up the Broccoli and Onion together into half inch or smaller pieces. Not quite a mince but a chop, smaller than a dice.
•    Mix Broccoli, Onion, Meat, and seasonings together
•    Fill the tortillas with the mixture and place in glass dish (at least 9 X 12) put any excess mixture around the sides and on top
•    Add Cheese to the top
•    Cook in oven for 12 minutes or until cheese starts to slightly brown

Stats for total meal:

Calories:   1271.02
Protein:     140.69 grams
Fat:           37.18 grams
Carbs:       92.02 grams
Fiber:        42.59 grams

#50-Sami’s Bakery Low Carb Protein Cheesecake

Sami’s, in general, has amazing eats. Low carb wraps, chips, breads, high protein, whole grain, and gluten free are just a few of the delicious and wonderful treats they offer. You name it, they have it. The only reason they aren’t higher on the list is because they are hard to find locally and are a bit costly. That being said, if you have the money or if you can find it locally, then get on it.

Stats of Cheesecake: 56g Slice: Calories:170  Carbs:2g

#49-Rudy’s Right Choice-Low Carb Bread

Low carb bread has a habit of tasting like cardboard on a good day. On top of that, it is usually pretty high in calories because they up the fat content. Fat isn’t bad of course, but in this case if looking for lower calories it is a concern. Rudy’s right choice hits the best of both worlds with each slice landing at 45 calories and only 7 carb grams per piece. The ingredients are quality as well. The only con is it can be a little harder to find and not available, that I can see, internationally.

#48-Kay’s Natural Cripsy Protein Chips

These chips come in a high variety from nacho cheese to lemon herb. With 10 grams of protein per serving and only 110 calories for 30 grams, you are going to have a hard time finding pre-packaged chips with these stats.  I highly recommend giving the nacho cheese a try and perhaps you can pair them with a sandwich made from the bread above.

#47-Calorie Countdown Milk

When you are smack dab in the middle of a hardcore diet every calorie counts. That being said, a nice way to tasty up your shakes with ease is to use milk instead of water. Calories Countdown Milk is perfect for this with only having 45 calories for every 8 ounces. They are also one of the only brands that have a Reduced Fat Chocolate Milk and this make me happy.

#46-Glenny’s 100 Calorie Brownies

It’s a brownie. It is 100 calories. Need I say more? They are available in Chocolate Chip, Peanut Butter, and Blondies. The only reason this isn’t in the top 10 is because they are hard to find.

#45-Zero Impact Pumpkin Protein Bars

These protein bars are the richest and softest protein bars I have ever had.  They are also huge and while they are not that low in calories at around 400 calories per bar, they are highly balanced with macros,  and are essentially a whole meal in a bar. A soft, chewy, mouth sticking, yummy meal in a bar at that.

#44-Cinnamon Pork Puffs

These rinds are 45 calories per serving, one carb, and perfect for the low carbing lifestyle especially when looking for a crunch. One of the hardest aspects of low carb eating is sometimes missing out on certain textures and feels and this more than makes up for it.

#43-Bob’s Red Mill Xanthum Gum

It is a fantastic, very low calorie, thickener that you can use to add a little consistency to anything. This one might be a little hard to find at local stores so you can either buy it online or you could also you glucomannan, guar gum, agar, or pectin. It is a fantastic thickener that you can use to add a little consistency to anything.

#42-Better N’ Peanut Butter

This is the first peanut butter appearance and it wont be the last. It isn’t a secret that I have a problem with peanut butter and I have bought every kind of peanut butter that there is. This PB has 100 calories per serving and very little will go a long way. It doesn’t taste a lot like normal peanut butter and is really sweet, but it is a great flavor in general.

#41-Nutritious Living Hi-Lo™ with Strawberry Pieces

Cereals are very good at being low in protein, high in crap, and bland on taste. With 12 grams of protein per serving the Hi-Lo cereal is making the others look even worse.

#40-Colgin Liquid Smoke

Liquid smoke is more of a seasoning than a food but I have to put it in because it is a great way to add a new flavor to your  eating. Anyone who has tried to “spice up” their chicken knows that sometimes you need all the help you can get. If you want the flavor without the smoke then you have just found it in a bottle.

I read of lot of news feeds that have been tagged with “weight loss” or “exercise”. And I’ve read a lot of related studies as well, but I also like to see how those studies are turned around and changed.

This post, however, is not about studies.

Left and right I have seen report after report about a particular fat cat, aptly named Prince Chunk (see below).

Okay, now I love the kitties, so this isn’t hate to the kitties. And to the fat cat I am very happy for you, but what about the starved cats that I see everyday?

This report below was released today and I just had to die from laughing.

The big cat doesn’t have a thyroid condition, after all. The vet also has prescribed a high-protein diet for the tubby tabby, who is within three pounds of the heaviest on record.

It looks like the veterinarians get it better than our regular doctors. And from experience, I can tell you Pet Insurance is WAY better than human insurance.

So next time a client asks for a referral I am sending them to Southwoods Animal Hospital.

Oh, there is a second part to this post, so this is only the beginning…

Alan Aragon-Girth Control-A Review

I’m going to admit I’ve been guilty of skimming books. I read, and I read A LOT.

When I was about 11 years old I remember that infomercial sweater guy who had a speed reading course on his amazing discovery “show,” and I wanted it soooo bad. Needless to say I didn’t get it, but I did learn to read pretty fast anyway. Sometimes I read too fast and sometimes there were books you just can’t read that fast at all.

Enter Alan Aragon’s Girth Control: The Science Of Fat Loss and Muscle Gain.

Alan Aragon is by far one of the coolest guys I have never met. I have had the pleasure of talking to him a few times and can assure you that he is as smart as he is, and he also “get’s it.” That’s a rare quality. Most who are really smart like that miss the boat. They don’t “get it” and they can’t communicate with people. Instead, they just end up talking in a gibberish that only 10 other “smart people” can understand. It becomes an intellectual pissing contest if you will. It’s sad to see, but a bit funny to watch.

You don’t get that with Alan. However, this post isn’t about him really, this is about Girth.

The first time I read Girth I would call it “more grazing.” I saw enough to know that I would like it if I REALLY read it.

I got the urge to read it again, and really read it. Maybe I’m just smarter or maybe it’s just that I am dying for quality information but it was a heck of a great read the second time around.

First, who is this book for?

Currently, my readers right now are a bit all over the map, and I will be honest that for some of you the beginning aspect of this book may be too technical at first. However, I encourage you to push those boundaries of knowledge comfort anyways. Sometimes it’s a good thing to challenge your ability to learn. That is not to say that this is fat loss rocket science, I’m simply noting that some parts are advanced in discussion (i.e. scientific).

I will say if you’re a trainer and you want to be worth a grain of salt, you will buy this book. And if you ever read the phrase “studies show” and it actually means something to you, then you should buy this book.

Most of the world does not realize what a study is and how flawed they are in general yet many will make really important daily life choices because of them, or worse because of press summaries of those same studies. That can be a very dangerous thing for your ability to choose your own destiny and to go outside of that box that you have stuck yourself in.

If you ever want to free yourself of relying on the words of others, if you ever want to provide yourself with the ability to be the ones “in the know” then this is one hell of a place to start. This is the kind of book Taubes wishes he could write.

“With bills to pay and/or mouths to feed, scientists aren’t magically exempt from the many temptations and the guerrilla tactics of doing business.”

The first three chapters teach you how to understand research on a level of the technical and, even better, how to form opinion from scientific observations. These first sections are the ultimate lesson in study do’s, dont’s and they did what’s?

After that you get into the bulk of the book which is the teaching of what proteins, carbs, and fats really are and why we have the feelings and theories behind them that we do.

Is GI index really important?

What kind of role does insulin really play on fat loss?

How much protein do we really need?

How are fats changing the way we look at health?

One of my favorite parts of the book is the insertion of studies. While it may seem at first glance that Alan keeps the reading buried a bit too deep in data, you have to look between the lines a little bit and see that sometimes he is downright exposing hypocrisy and the ridiculous acts of our government and the lives of other cultures. Point being, it’s only dry if you don’t see the work for what it is: an exposure.

“I’ve always felt that Mother Nature winced every time a yolk hit the waste basket. Having scoured the research, it’s comforting to know that my gut feeling on the issue has a fair amount of support.”

Following that statement are some great study highlights about the effects of yolks on our health. I don’t know if any of you read the recent headlines about how eating eggs will kill you, but Alan can easily show you not only is this not the case but also, again, how to read an actual study and see it’s flaws.

There is also some talk of supplements in Girth, what they do, and if you need them. A book that saves some money in your pocket is always a good read as the majority of us are always walking to GNC.

Alan finishes out the book with what you need to do to achieve either fat loss or muscle gain on a optimum and successful level. This is where his information, for the most part, is a pretty easy read. He covers some great topics from fasting, pre/post workout nutrition, interval training, and the bodies ability to adapt to dieting down.

“The body is simply doing its job as an adaptive survival unit when a plateau occurs. When you stop to think about it, the ultimate goal is to plateau!”

Obviously my focus is on fat loss, and, well, technically Alan is my competition but what can I say, the man does his job and he does it well. If you already have my books (’cause you know you should) then why not add Alan’s to the collection as well? Never be afraid to learn more, never be afraid to keep diving deep. There are few of us out there in the world who don’t like to be told what to think and do. I think this is why I liked Girth so much; I like those who scream against the crowd.

It’s safe to say that Girth delivers on the knowledge front. I hope you take a chance and believe in your ability of thought and give it a shot as well. Always strive to put knowledge in your own hands because that’s the true way to lead to a new life.

Knowledge is fat loss power.

3 Ways To Get Peanut Butter (without all the calories)!

Any one that knows me, heck, even some of my clients know that I have a serious problem with peanut butter. Complete addict. I have even blogged about it before.

A recent question from one of my readers left me wanting to bring this issue back to light, but with new info.

Question:

Leigh,

I absolutely LOVE peanut butter but tend to over-consume it when I
eat it. I always intend to eat only a serving and end up 2-3+. No,
it’s not the end of the world but it can make the difference in how
much of a deficit I create that day.

I often read that it’s best to just enjoy the food and if you allow
it more frequently it will become less tempting. Likewise, many say
simply remove the temptation from your pantry.

I know it’s not like I’m binging on chocolate bars everyday but it
can affect my progress. What do you tell your clients who battle this
type of problem?

Now obviously if you have a PB addiction you at some point might have to weigh getting it out of the house, but first I suggest trying these alternatives.

1-Peanut Butter and Fat Free Cream Cheese

Mix your Peanut Butter with some Fat Free Cream Cheese (maybe add a little Splenda for sweetness) and you just doubled the amount of peanut butter goodness. FF Cream Cheese only has 30 calories per serving. This one is the big winner for low calories and high in protein/fat combo. Great for pre-bed.

2-PB2 and Better Butter Combo

PB2 is a de-fated dehydrated Peanut Butter. Better n Peanut Butter is a de-fated jarred peanut butter. Mixed together with some milk and you have LOADS of peanut butter yummy. The only draw back is low in the good fats but if looking for the taste this is a big winner.

3-Peanut Butter “Ice Cream” Recipe

INGREDIENTS

� 1 cup of cottage cheese (non-fat)
� 2 tbsp natty peanut butter of choice
� 1/4 cup of splenda
� 1 1/2 tbsp of cocoa powder
� sprinkle of salt (or salt substitute)

DIRECTIONS

Mix all together, put in a Tupperware container/bowl. Leave in freezer for 1 hour, after that leave in the back of the fridge.

For Whole Container
Calories: 355
Protein: 40
Fat: 17
Carbs: 7

2 things I saw on TV this Weekend

I actually took some time off this weekend to spend some time at home. I think I even went a whole 12 hours without checking my email. Yeah, you know YOU contribute to the problem. Anyways, there are 2 things I caught on TV this weekend that I want to discuss with you.

#1-Fit Tv’s Blaines Low Carb Kitchen-Why doesn’t the dude just bath himself in oil?!? Now we know there is nothing wrong with fat, but jesus, do low carb people not get that calories account for something too? I got a lot of hate recently for my “bi*ching” about low carb. First off there is a difference between keto, low carb, no carb, high carb, lotta carb, lil’ carb…technically my current life long diet is low carb as I stick to it on average at about a 40% daily carb intake. I like lots of protein and fats in my diet, feel better that way, and balance is key. However, I am not afraid of a damn tomato and can’t wrap my head around why you think you are going to lose fat by not counting calories and dumping ladles of oil over garlic. No wonder he got the boot and ended up on CSI as a overweight sexual offender chef.

Take home point for #1-Calories do count even if you are going to restrict carbs.

#2-Slimquick Ad- For one thing, why doesn’t that cartoon man leave that woman? You know she is the kind of woman that comes into the living room while he is sitting in his recliner and beats him over the head with a newspaper and tells him to take out the trash. I feel for the cartoon husband in the Slimquick ads. Here is a link to the old one so you can get the feel for this woman. http://www.samanthaferguson.com/producer/27 This recent one states that it’s hard to lose weight when you have to eat out so much. So they both switch to ordering salads. He loses lots of weight and she loses her breasts, I am not making this up. So why does this happen? Why does Ted lose more weight?

Well let us assume that they both head up to Ruby Tuesdays and get the Classic Chicken Salad. It rings in at a total of 1,022 calories. Now in a day she burns 2,200 calories, and in a day he burns 4,400 calories. She eats that salad just twice and she isn’t going to budge. He can eat it three times and still lose weight.

Take home point for #2-Bigger people burn more. Women (in general) cannot eat the same amount as men and lose weight. It sucks, but you don’t need a crappy pill, just eat half the salad next time, Sally.
