Back…and better than ever

First let’s keep the mushy gushing stuff to a minimum, yeah I missed ya. That is all you are getting from me.

As some of you know I have been very busy with training, and the re-launch of the new Fat Loss Troubleshoot page.  First things first, a little gossip.

I would love to drape you with stories of sexiness, parties, and paparazzi stalkings, but the truth is the nutrition was so restrictive that they were just bitchy and wanted to sleep. Ah yes, we are all just humans after all. My days were spent talking nutrition trash, teaching some trainers how to do a better job with their “star” clients, and basically teaching the blind to lead the hungry. I’m kidding ( a little). All in all I got really hands on and got to teach other trainers how to get the best from their clients, no matter who they are.

Why does any of it really matter? It doesn’t, but ooooh the sexy resume bulking it does for me.

Enough of that, let’s get to the good stuff.

I have to say this is one heck of a read for those who want to go way beyond, pun intended, simple carbs.

Last, and certainly not least, I have two new recipes for my big meal folks and hopefully some more to come in the next few days. The beauty of these recipes is that you can easily make them higher calorie if need. Just a lil bit of everything as need to move up the calories. Gram it up!

Chicken and Sausage Bean Soup

Ingredients:

• Unbleached All Purpose Flour – 16 grams
• Walnut Oil – 14 grams
• Chopped Onion – 160 grams
• Chopped Red/Green Peppers – 175 grams
• Minced Garlic – 5 grams
• Chopped Celery – 150 grams
• ½ tsp Basil
• ½ tsp Thyme
• ¼ tsp Ground Red Pepper
• Chopped Tomato – 400 grams
• Chick Peas – 300 grams
• Turkey Sausage cut into 1-inch pieces – 112 grams (I used Jenni O)
• Lean Chicken – 14 ounces
• Fat Free Low Sodium Chicken Broth – 14 ½ ounces
• Salt and Pepper to taste

Directions:

• Combine flour and oil in a Dutch oven; saute over medium-high heat 3 minutes.

• Add onion and next 6 ingredients (onion through red pepper); cook 3 minutes or until tender, stirring frequently.

• Stir in chicken, sausage, tomatoes, and peas, and broth; cook 6 minutes or until thoroughly heated.

Stats for total meal:

Calories: 1311.92
Protein: 137.84 grams
Fat: 32.9 grams
Carbs: 127.48 grams
Fiber: 25.66 grams


Baked Broccoli and Cheese Beef Quesadillias

Ingredients:

•    Low Carb Tortillas – 4 or 156 grams (I used the Multi Grain Low in Carbs Tumaro’s Goumet Tortillas)
Here are the stats of the tortillas so you can find something similar if needed:
Stats: 39 g   Calories: 100  Fat: 2.5g  Protein: 7g  Carbs: 13g   Fiber: 8g
•    4% Lean Ground Beef – 16 Ounces
•    Broccoli – 300 grams
•    Onion – 200 grams
•    2% Mexican Cheese Blend – 50 grams
•    2 tsp Ground Cumin Powder
•    1 tsp Light Salt
•    ½ tsp Black Pepper
•    1 pinch of Ground Turmeric

Directions:

•    Pre-heat oven to 375 degrees
•    Steam the Broccoli and Blanch the Onions (cook them in water)
•    Once the veggies are done cook the meat make sure it is broken up into bite size or smaller pieces.
•    Chop up the Broccoli and Onion together into half inch or smaller pieces. Not quite a mince but a chop, smaller than a dice.
•    Mix Broccoli, Onion, Meat, and seasonings together
•    Fill the tortillas with the mixture and place in glass dish (at least 9 X 12) put any excess mixture around the sides and on top
•    Add Cheese to the top
•    Cook in oven for 12 minutes or until cheese starts to slightly brown

Stats for total meal:

Calories:   1271.02
Protein:     140.69 grams
Fat:           37.18 grams
Carbs:       92.02 grams
Fiber:        42.59 grams

PB2 News-PB2 is now 85% less fat

I know it is an old picture, but the news is true!

Some of you may be thinking that my statement of “less fat” is a time warp back into the 1980’s. Let me get this out of the way now, so that I can get to the good stuff.

Fat is good. We love fat. We need fat.

The only reason I care is because less fat will mean less calories, more peanut butter flavor, and it helps for those dieting down on smaller calories. Good? Got it?

It seems like that not only did you, my readers, like my Fitcast appearance (my email has been blowing up) but PB2 themselves liked my Fitcast appearance. I want to give a “thank you” to Bell Plantation for kind words and I hope that they and you enjoy the recipe I shared on the show.

Peanut butter, in all forms, will one day rule the world!

I’m just here for the food…but how do I cook it?

By now a lot of you have gotten the message that The Fat Loss Troubleshoot is about teaching you how to “fish” for fat loss. In general, I feel that way about everything. Whatever I can learn to do myself, I try to do. I like collecting skills; it’s fun.

One skill that I was lucky enough to have come across naturally was cooking. However, for some, the act of cooking successfully is a great challenge. Since I believe that good food goes a long way with surviving fat loss, here’s a lesson for the day.

Since I confessed to a Peanut Butter addiction yesterday, I thought that today I would confess to another dark secret.

I have a massive crush on Alton Brown.

 

He’s just my kind of guy, what can I say. He appeals to the humor and scientific side of me equally, a very rare quality.

Alton feels about cooking the way I feel about fat loss. If you don’t have it naturally, if you aren’t “gifted” in it, then you have to learn it from a no-nonsense point of view.

So it’s funny that I got this email today because I was just thinking about making a Alton post.

What is a good “teach a man to fish” cookbook that you recommend?

Well Neal first off, what an awesome, freaking question! You know why? It says you want to learn something, you don’t just want to be blindly lead through life. That’s part of what makes people great at what they do, not just lucky.

To answer your question I highly recommend picking up Alton Brown’s I’m Just Here for the Food (I believe Version 2.0).

The book is just awesome. It goes through the basics of everything, gives great graphs, some cartoons, humor and more. You learn about spices, different cooking methods, rubs, pots to use, knives, you name it. Basically, if you are a cooking moron, by the end of this book you will truly be informed. Maybe you will need recipes, maybe you won’t have soul-cooking going on but you will never not rock out instructions ever again.

3 Ways To Get Peanut Butter (without all the calories)!

Any one that knows me, heck, even some of my clients know that I have a serious problem with peanut butter. Complete addict. I have even blogged about it before.

A recent question from one of my readers left me wanting to bring this issue back to light, but with new info.

Question:

Leigh,

I absolutely LOVE peanut butter but tend to over-consume it when I
eat it. I always intend to eat only a serving and end up 2-3+. No,
it’s not the end of the world but it can make the difference in how
much of a deficit I create that day.

I often read that it’s best to just enjoy the food and if you allow
it more frequently it will become less tempting. Likewise, many say
simply remove the temptation from your pantry.

I know it’s not like I’m binging on chocolate bars everyday but it
can affect my progress. What do you tell your clients who battle this
type of problem?

The solution to you problems are here with me.

Now obviously if you have a PB addiction you at some point might have to weigh getting it out of the house, but first I suggest trying these alternatives.

1-Peanut Butter and Fat Free Cream Cheese

Mix your Peanut Butter with some Fat Free Cream Cheese (maybe add a little Splenda for sweetness) and you just doubled the amount of peanut butter goodness. FF Cream Cheese only has 30 calories per serving. This one is the big winner for low calories and high in protein/fat combo. Great for pre-bed.

2-PB2 and Better Butter Combo

PB2 is a de-fated dehydrated Peanut Butter. Better n Peanut Butter is a de-fated jarred peanut butter. Mixed together with some milk and you have LOADS of peanut butter yummy. The only draw back is low in the good fats but if looking for the taste this is a big winner.

3-Peanut Butter “Ice Cream” Recipe

INGREDIENTS

� 1 cup of cottage cheese (non-fat)
� 2 tbsp natty peanut butter of choice
� 1/4 cup of splenda
� 1 1/2 tbsp of cocoa powder
� sprinkle of salt (or salt substitute)

DIRECTIONS

Mix all together, put in a Tupperware container/bowl. Leave in freezer for 1 hour, after that leave in the back of the fridge.

For Whole Container
Calories: 355
Protein: 40
Fat: 17
Carbs: 7

Yum!
